Mini Beef Wellingtons

Last year Annie and I cooked beef wellington. Though delicious, the beef was a little overcooked and ultimately the bottom got pretty soggy. It’s a difficult recipe to make right and one, I suspect, that benefits from experience. That’s all you’ll ever get from me in terms of an admission of defeat especially since now, there’s a new recipe that will warrant revisiting this imposing spectre. Beef Wellington, prepare to meet your maker šŸ˜‰
