Grilled Scallops with Lemony Salsa Verde

Scallops are a tricky sort, like a soft-boiled egg, or crispy bacon. These things are very easy to cook, even easier to mess up and are so delicious when done properly that the threat of failure can become a spectre too intimidating to overcome. I think I’ve just about conquered the crispy bacon and soft-boiled egg challenges, it’s time to aim a little higher.
